Quinoa & Chickpea Salad
A quick and easy summer salad!
This simple quinoa and chickpea recipe is packed with nutritious ingredients. Load your lunchbox or serve at your next barbecue!
Ingredients
- 1/2 cup cooked Organic quinoa
- 425g tin Macro Organic chickpeas, drained
- 40g snow peas, sliced
- 4 cherry tomatoes, chopped
- 2 tsp Organic sunflower seeds
- 2 tsp lemon juice
- 1/2 tsp olive oil
Method
- Combine cooked quinoa, drained chickpeas, snow peas, cherry tomatoes and sunflower seeds in a bowl or container.
- Whisk together lemon juice and olive oil, and drizzle over salad.
Handy Tips
Make ahead of time - pack the salad separate to the dressing and combine just before serving.
