Spanish Summer Salad
Fresh and vibrant Spanish style salad!
Shake up your summer barbecue with this quick and easy Spanish salad recipe.
Ingredients
Dressing
- 3 large garlic cloves, crushed
- Pinch of sugar & chilli powder
- 1/2 cup each: red wine vinegar, olive oil
Salad
- 1 bag mesclun mix
- 424g can tuna, drained and flaked
- 1 cup cherry tomatoes, cut in half
- 1/2 cup diced cucumber
- 1/2 cup Kalamata olives
- I/2 cup red onion, sliced finely
- 1/4 cup each of chopped parsley & mint
- 3 hard-boiled eggs, peeled & halved
- salt & pepper to taste
Method
Dressing
- Whisk the garlic, sugar, chilli powder and vinegar to combine.
- Gradually whisk in the oil.
Salad
- Combine the salad ingredients in a large bowl.
- Just before serving, drizzle with a little of the dressing and lightly toss.
