Raw Bars
A raw vegan delight
These vegan caramel chocolate bars make the perfect sweet treat for any occasion. Simply store in the freezer to hold the raw goodness.
Ingredients
Base
- 1 cup oats or ground buckwheat
- 1/2 cup almond meal
- 3 Tbsp coconut oil
- ¼ cup maple syrup
- Pinch salt
Caramel
- 1 cup of cashews soaked in boiling water 10-15 minutes
- 200g dates soaked in boiling water for 10-15 minutes
- 1 tsp vanilla bean paste/extract
- ½ - ¾ cup of date water
- ¼ cup coconut oil
- ¼ tsp salt
Chocolate
- ½ cup cacao powder
- ½ coconut oil
- 1 tsp smooth pics peanut butter
- Pinch sea salt
Method
- To make the base first blend the oats or buckwheat into a flour. Then add all remaining ingredients until combined, add water if needed. Press this mixture into a tray lined with baking paper and pop into the freezer.
- To make the caramel, place all ingredients into a blender and blend until completely smooth. Take the base out of the freezer and pour the caramel evenly on top. Place this bake in the freezer to set for 2-3 hours.
- To make the chocolate, melt the coconut oil and add remaining ingredients.
- Once the caramel is set cut into bars and dip in the melted chocolate. Place on baking sheet and sprinkle over sea salt/toasted nuts. Put in the freezer to store.
