Raw Bars
A raw vegan delight

These vegan caramel chocolate bars make the perfect sweet treat for any occasion. Simply store in the freezer to hold the raw goodness.

  • 1 cup oats or ground buckwheat
  • 1/2 cup almond meal
  • 3 Tbsp coconut oil
  • ¼ cup maple syrup
  • Pinch salt
  • 1 cup of cashews soaked in boiling water 10-15 minutes
  • 200g dates soaked in boiling water for 10-15 minutes
  • 1 tsp vanilla bean paste/extract
  • ½ - ¾ cup of date water
  • ¼ cup coconut oil
  • ¼ tsp salt
  • ½ cup cacao powder
  • ½ coconut oil
  • 1 tsp smooth pics peanut butter
  • Pinch sea salt

  1. To make the base first blend the oats or buckwheat into a flour. Then add all remaining ingredients until combined, add water if needed. Press this mixture into a tray lined with baking paper and pop into the freezer.
  2. To make the caramel, place all ingredients into a blender and blend until completely smooth. Take the base out of the freezer and pour the caramel evenly on top. Place this bake in the freezer to set for 2-3 hours.
  3. To make the chocolate, melt the coconut oil and add remaining ingredients.
  4. Once the caramel is set cut into bars and dip in the melted chocolate. Place on baking sheet and sprinkle over sea salt/toasted nuts. Put in the freezer to store.
