Breakfast Slice
Perfect for packed lunches!
Make it ahead, cut it up, and wrap it up for a breakfast you can eat on the go!
Ingredients
- 2 bananas
- ¼ cup oil
- 2 free-range eggs
- 2 tsps ground cinnamon
- 1½ cups rolled oats
- 2 tsps baking powder
- 1 cup wholemeal self-raising flour
- 1/3 cup desiccated coconut, plus 1 tsp extra for sprinkling
- ¼ cup chia seeds, plus 1 tsp extra for sprinkling
- ½ cup dried apricots, finely diced
- 1½ cups kumara, grated
Method
- Preheat oven to 180°c and line a 20x30cm slice pan with baking paper.
- Mash bananas in a large bowl. Add oil and eggs, and mix well to combine.
- In a separate bowl stir cinnamon, oats, baking powder, flour, coconut, and chia seeds to combine. Add to banana mixture with apricot and kumara, and stir until just combined.
- Tip the mixture into the pan and spread evenly. Sprinkle with extra coconut and chia seeds. Bake for 30 minutes or until a skewer withdraws clean when pierced in the centre. Set aside to cool briefly in the pan, then cut into slices.
