Asparagus Frittata

A quick and tasty light meal.

Perfect for lunch, dinner or made ahead for packed lunches!


  • 1 Tbsp oil
  • 1 bunch asparagus (250g), sliced
  • 1 large onion, finely chopped
  • 2 rashers bacon, finely chopped
  • 4 eggs
  • 1 cup grated cheese

  1. Heat the oil in a heavy based pan. Sauté the asparagus, onion and bacon for 4 - 5 minutes or until the onion is golden brown.
  2. Place in a well greased 25 cm diameter baking dish.
  3. Beat the eggs and pour over the asparagus mixture and sprinkle with cheese.
  4. Bake at 200°C for 20 - 25 minutes or until the mixture is set and golden brown. Serve either cold, warm or hot.
