Make Ahead: The bars can be refrigerated in an airtight container for up to 1 day; they fare best when also individually wrapped in plastic wrap.


  • 250g strawberries, hulled
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ cup dried apricots
  • 1½ cups rolled oats
  • 1 cup shredded coconut
  • ¼ cup white chia seeds

  1. Line a small, deep rectangular baking tray with baking paper.
  2. Place strawberries, vanilla, cinnamon, and dried apricots in a blender and pulse until smooth.
  3. Transfer mixture to a large bowl and add rolled oats, 3/4 cup shredded coconut, and chia seeds and stir to combine.
  4. Pour mixture into prepared tray and press down firmly. Press in remaining shredded coconut.
  5. Freeze for 1 hour or until firm. Using a sharp knife, cut the block into 12 equal portions. Store in the fridge until ready to serve.
