Avocado Hummus With Crunchy Veggies
A healthy, vegan, easy snack or appetizer with pita or veggie chips!
It’s healthy, satisfying, and super easy to make!
Ingredients
- 200g hummus
- 1 avocado, deseeded, chopped
- 1 tbsp lemon juice
- 1/2 cup continental parsley leaves
- 1/2 cup basil leaves
- 100g green beans, trimmed, halved
- 1 bunch baby asparagus, trimmed
- 1 bunch carrots, trimmed, peeled
- 4 baby cucumbers, quartered lengthways
- 175g capsicums, quartered, deseeded
- 100g snow pea sprouts, to serve
Method
- Place hummus, avocado, lemon juice, parsley, and basil in a food processor and process until smooth.
- Divide hummus mixture among 4 x 2 cup-capacity jars. Arrange vegetables in jars. Secure with lids.
